Red Bean Mochi

Mochi Mochi Mochi! Everyone loves mochi, whether it's filled with beans, cream, or jelly. Today i made red bean filled mochi because it is my grandmother's birthday and i wanted to make her something simple but delicious. Making these mochi was super simple with the little ingredients required. Cleaning up was the hardest part but the trouble was worth it!
I used Mochiko (sweet rice flour) and can of red bean paste (find them at asian supermarkets). This requires a microwave and a heat proof bowl. This recipe is very quick and easy!



Ingredients:
1 box of mochiko
1 cup water
1 cup brown sugar
boiling water just enough to melt sugar (4 tbsp?)
cornstarch for dusting

Directions:
mix together mochiko and water
(the batter will be like pancake batter)
mix boiling water and sugar
mix sugar into batter
cook in microwave for 3 min.
stir  and pound with wooden spoon
cook in microwave for 2 min & 30 sec.
pound with spoon and cool in the freezer for 10-15 mins.
pound with fist
cut dough into desired size and roll out to a circle
drop a ball of bean paste and wrap it with the mochi dough.
pinch the edges to close
refrigerate and enjoy!
